For the beautiful Tearz

ok. wow. haha. I never thought I'd actually be posting some of my little old recipes on this here bloggy. maybe because....I'm not a good enough baker to do so!
BUT.
anything for you Tearz. although I don't know why you need it, you already make the yummiest spunge cakes and, goodies!
well, here's the recipe I use..
hope it turns out well for you!

Lemon Meringue Pie

1 cup sugar
2 tbs flour
3 tbs cornstarch
1/4 tsp salt
4 egg yolks, beaten (reserve the egg whites for the meringue)
1 1/2 cups water
1/4 to 1/2 cup lemon juice
1 tbs grated lemon zest
2 tbs butter

In a saucepan, stir together the sugar, cornstarch, salt and water. Cook on medium heat until the mixture comes to a boil and bubbles, stirring often. Cook for 3 more minutes, stirring continuously. Turn the heat off.

Whisk the yolks in a separate bowl. Whisk in 1/2 cup of the hot mixture bit by bit, then whisk the yolk mixture into the saucepan. Let the filling return to a gentle boil and cook for 3 more minutes, stirring continuously. Turn off the heat. Add the lemon zest, lemon juice and the butter. Stir until it is smooth and let cool slightly.

Pour the lemon mixture into a baked pie or tart shell and top with meringue.
Bake at 350 for 10-12 minutes. depending on oven, and until meringue is slightly brown.

Cut, serve and dig in!!!!

for the meringue I just whip up the egg whites and add a bit of sugar and a dash of salt. until little peaks form:) yay

As Easy as 123 Pumpkin Pie

1/2 cup evaporated milk (most of the time I use normal milk. easy and pay less><>Combine the ingredients together, blending until smooth. Pour batter into the prepared unbaked pie shell.
Bake for 45-50 mins, until knife comes out clean.

as for the pie crust. I never use a recipe. but the one I originally started out with, that is basically the one that sticks to my head...

1 1/2 cups flour
1/2 tsp salt
3 to 4 tbs butter
1/2 cup water

Combine flour and salt in bowl. Add butter and blend with fork, pastry cutter or your fingers until mixture is fairly coarse. ( I take two knives and cut it up that way)
Add water, 1 tablespoon at a time, gently mixing dough after each addition until dough forms a ball. Place dough on a lightly floured surface and roll into a 10 to 11 inch circle. Line 9-inch pie pan. Flute edges.

and that would sum it all up!!
happy cooking! Love you lots and let me know how it goes eh?! hee hee
